Biocellulase W is a liquid enzyme preparation derived from Trichoderma reseei. It is a useful additive in wort production when the mash ingredients do not provide enough enzymatic power by themselves. Treatment of mash with Biocellulase W results in the breakdown of complex carbohydrates such as β-glucans and arabinoxylan into simpler polysaccharides. This reduces wort viscosity, increases extract, increases runoff rates, and reduces beer haze.
