Château Cara Blond™ is a very light-colored, Belgian crystal malt. It imparts a mild caramel-sweet aroma and adds golden color to beer. A distinguishing characteristic of all caramel malts is glassiness. This glassy endosperm creates the desirable non-fermentable components that give true caramel malt the ability to contribute mouthfeel, head retention, and extended beer stability. Cara Blond™ is suitable for use with all beer styles, but its mild character will best contribute to light lagers and ales, low alcohol beers, and white beers.
Crystal malts are gently cooked during the malting process. Cooking initiates the enzymatic conversion of starches into fermentable sugars, and caramelizes some of the sugars as the malt reaches its final color. This eliminates the need to mash crystal malt, and ensures that some of the sugars will survive fermentation to sweeten the beer.
