This product is All-In-1™
This product is a blend of active dry yeast and enzymes. It is recommended for the production of particularly high-attenuating beers and for very high gravity fermentations, such as Barley Wines. The yeast strain in this blend is able to reach 18% alc. (v/v), depending on the process and the substrate, with a very good resistance to osmotic pressure and high fermentation temperatures.
Optimum fermentation temperature 25-35°C (77-95°F).
Usage Rate: 100 - 160 g/hl

Residual Sugars: 0 g maltotriose/L corresponding to apparent attenuation of 97%
Shelf Life: 36 months from production date. 7 days if opened.
Storage: Store in cool (< 50ºF), dry conditions
Total Esters: 70 ppm at 30ºP at 25ºC in flask
Total Superior Alcohols: 375 ppm at 30ºP at 25ºC in flask
Viable Cells At Packaging: >1 x 10^10 cfu/g for ales | >6 x 10^9 cfu/g for lagers
